In case you’re new here, our one pot wonder meals are kind of a big deal and with the cooler weather upon us, we thought it was time to bring them back.
Our creamy tomato and sausage pasta bake is easy as it is delicious. And it all comes together in one pot. You’ll sauté, simmer, and bake your way to a delicious, cheesy dish. Plus, you can prep this on a Sunday and have your weekly lunches or dinners sorted.
Method:
1. Preheat oven to 200°C. Mince the garlic and finely chop the onion. Set aside.
2. Heat olive oil in a large, ovenproof casserole dish over medium heat. Remove the sausage from its casing and crumble it into the pan. Cook for 4-5 minutes, or until golden, then stir in the tomato paste and cook for another 1-2 minutes, or until it has darkened in colour.
3. Add the garlic, onion, dried herbs, chilli flakes, and a pinch of salt and pepper. Cook for 2 minutes, or until the onion has softened.
4. Stir in the tinned tomatoes, water and two basil leaves. Simmer for 10 minutes, or until the sauce thickens slightly. Stir in cream and pasta and cook for 1-2 minutes, stirring regularly so the pasta doesn’t stick to the bottom. Remove from heat and stir in the baby spinach until wilted. Top with torn mozzarella and grated Parmesan.
5. Transfer the dish to the oven and bake for 15-18 minutes, or until the pasta is soft and the cheese is golden. Garnish with the remaining basil and serve.
