Sharing our new favourite way to make tacos... and caesar salad all in one.
This recipe is easy to make, packed with healthy ingredients and is great for your gut health too. These smash tacos with a twist are a great spring recipe.
Under 30 mins | Serves 4
Method:
- In a medium bowl, combine chicken mince with garlic powder, onion powder, paprika, salt and pepper.
- Divide the chicken mince evenly between each tortilla and spread it into a thin, even layer right to the edges. Sprinkle panko breadcrumbs evenly over the chicken layer and gently press so they stick.
- Heat a large non-stick pan over medium-high heat with a light spray of olive oil. Place tortillas chicken-side down into the pan. Cook for 3-4 minutes until the chicken is golden, crisp and cooked through. Flip and cook the tortilla side for 1–2 minutes until lightly toasted and crisp. Repeat with remaining tacos.
- Meanwhile, make the Caesar dressing by combining the minced garlic clove, parmesan, yoghurt, mayonnaise, Dijon, lemon juice, salt and pepper in a medium bowl. Mix until smooth and creamy. Roughly chop the cos lettuce, then add to the dressing and toss to coat.
- To serve, top each smash taco with the Caesar salad. Finish with extra parmesan, cracked black pepper and a squeeze of lemon.
