Apple crumble protein bars

Wholesome, protein-packed, and bursting with the comforting flavours of apple crumble. These protein bars are the perfect snack for any time.

Method

  1. Preheat the oven to 180°C and line a loaf tin with parchment paper. In a medium bowl, mix together the oats, plain flour, chia seeds, sunflower seeds, cinnamon, protein powder, bicarbonate soda and dried apple.

  2. In a separate bowl, whisk the egg. Add the apple purée, tahini, melted coconut oil and maple syrup, then stir well to combine. Pour the wet mixture into the dry ingredients and mix until fully combined.

  3. Transfer the mixture to the fridge and chill for 15 minutes – this helps the oats absorb some moisture.

  4. Press the mixture firmly and evenly into the lined tin. Bake for 35-45 minutes, or until firm to the touch and lightly golden on top. If the top starts to brown too quickly, loosely cover with foil for the remaining bake time. Let cool completely in the tin before slicing into bars.

  • 200 grams rolled oats
  • 260g apple purée or applesauce
  • 1 tbsp plain flour
  • 20 grams chia seeds
  • 15 grams sunflower seeds
  • 1 tsp cinnamon
  • 40 grams vanilla protein powder
  • 0.5 tsp bi-carb soda
  • 20 grams red apple
  • 1 x egg
  • 20 grams chopped dried apple
  • 30 grams tahini
  • 30 grams coconut oil
  • 50 grams maple syrup
